Protein-Packed Cottage Cheese Muffins

Hi friends! I wanted to share one of our family’s favorite muffin recipes with you—one that’s not only delicious but also packs a punch of protein and is flexible enough to use whatever you have on hand in the kitchen.

These cottage cheese muffins are a staple in our house, especially on busy mornings or for a quick afternoon snack. They’re sweetened naturally, full of nourishing ingredients, and incredibly versatile. While the original recipe calls for coconut sugar and all-purpose flour, I like to make a few swaps to better fit our family’s pantry and nutritional goals.

Instead of coconut sugar, I use pure organic cane sugar. It’s what I usually have on hand, and it works just as well! For the flour, I try to reach for einkorn flour—an ancient grain that adds a little more protein and nutrition, which I love since it helps keep little tummies fuller longer. Einkorn also has a lower gluten content, which can make it easier to digest for some.

One of the best things about this recipe is how customizable it is. I’ve made it with fresh blueberries (tossed in flour so they don’t sink), chocolate chips for a treat, chopped pecans or walnuts for crunch, or even little bits of diced apple and cinnamon in the fall. Whatever mix-ins I have on hand, I toss them in and the muffins turn out delicious every time.

Here’s what you’ll need:

  • 1/4 cup melted coconut oil (or butter)
  • 1/2 cup coconut sugar (swap for cane sugar)
  • 1 tsp vanilla extract or vanilla bean paste
  • 1 cup plain whole milk cottage cheese
  • 1/4 cup milk (any variety works)
  • 2 eggs
  • 1.5 cups einkorn flour (swap for all purpose)
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 cup mix-ins (fresh fruit, chocolate chips, or chopped nuts)

Mix your wet ingredients first, then stir in the dry. Gently fold in your mix-ins, scoop into muffin tins, and bake at 350°F for about 20–25 minutes, or until golden on top and a toothpick comes out clean.

I hope this recipe becomes a go-to in your home like it is in ours. There’s just something so satisfying about baking something wholesome from scratch, knowing exactly what’s in it, and watching your family enjoy every bite. Let me know if you give it a try—I’d love to hear what combinations you come up with!

With love from the farm,

Mary
