Chocolate Funfetti Chip Cookies

I have the biggest sweet tooth ever. Growing up, my mom always had dessert on the counter waiting for after supper. It was normal to have a piece of something sweet a few nights a week, whether it be chocolate chip cake, a cookie, or her delicious baked chocolate pudding. (All recipes I will share in the future!) So naturally, I carried this trait with me throughout my adult life and into my marriage.

Noah, however, isn’t as big of a dessert-person as I am so when I do make something, which isn’t often, I make sure to make something really good. Today, I was craving a simple, chocolate chip cookie, something I knew he wouldn’t be able to resist.

During my grocery shopping trip last week, I found these super cute Funfetti vanilla chips. I snatched them up and knew I had to make something as soon as I could.

I modified my favorite chocolate chip cookie a bit to get exactly what I wanted, which was Chocolate Funfetti Chip Cookies. I love this recipe because it’s simple, has a small ingredient list, and makes the perfect 24 cookies. (Okay, if you count the amount of raw cookie dough Noah and I ate, probably 26 cookies.)

First things first, get your utensils and supplies out. I used my KitchenAid stand mixer and matching measuring cups and spoons. Begin by creaming your sugars, butter, vanilla, and egg together. Beat until smooth.

Next, add the flour, baking soda, and cocoa powder together. Mix that. Once it’s mixed, add in the chocolate chips. Again, mix.

Using a small cookie scoop, set 12 dough balls on a prepared baking sheet evenly. I use a heaping scoop of dough so each cookie is just a bit bigger.

Bake cookies in a 350’ oven for 8-10 minutes. Let them sit for 10 minutes before transferring to a cooling rack. Take artsy pictures to admire your work. Eat a few cookies while you’re at it.

That’s it. From the beginning to end, about one hour passed by. These cookies are my absolute fave and plan on using this recipe again and again!
